Sunday morning vegan bacon butty

When I was young my mum would cook bacon sandwiches for my brother and his friends at the weekend. Instead of feeling like I was missing out I discovered this recipe which I have been using ever since!

Not only is this recipe delicious but is it packed full of vitamin E, anti-oxidants, magnesium, protein, zinc and omega 3 fats.

Ingredients: (Makes enough seeds for a few sandwiches and also to sprinkle over your food for a few days!)

Your favourite bread

Your favourite sauce (ketchup/ brown)

For the seed mix

1 x cup seeds (I use sunflower and pumpkin)

1 tbs soy sauce

3 x tsps your favourite seasoning (I use mixed herbs, paprika and chilli powder)

Method:

  1. Mix all the seed ingredients together
  2. Spread on a baking tray and bake at 150C for about 10 mins or until crispy (keep an eye on them as they burn quickly!)
  3. Pack your favourite bread of choice with the seeds and add your favourite sauce

 

The remaining seeds can also be used to sprinkle on top of salads, soups etc.
